Bi-color delight


(my own recipe)


Ingredients:
  • 4 eggs
  • 4 tbsp sugar
  • 3 tbsp flour
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • 1/2 vanilla pod
  • rum essence 
Cream:
  • 1/2  pack vanilla pudding powder (I used  Dr. Oetker)
  • 250 ml milk
  • 1 1/2 tbsp sugar
  • 50 gr nutella (or more if you like)
  • rose jam
  • apricot jam
Loaf tin is needed 

Step one
 Preheat the oven to 200 Celsius degrees. First, we will start with the vanilla sponge cake. Start by separating two eggs, keeping the eggs whites and the egg yolks in separate bowls. Beat the two egg whites until they peak. Mix the two egg yolks with 2 tablespoons of sugar. Slit the vanilla pod down its entire length. With the width of a knife, scrape out all the seeds.  Put the vanilla seeds in the egg yolks and mix them well until the colors gets lighter. Then add the egg whites and mix carefully. To not let all the air out add 2 tbsp flour and 1/2 tsp baking powder and mix slowly. Put the mix in the loaf tin, put it in the oven for around 15 min. To check if the mix is cooked, penetrate the mix with a wooden stick and if it is still sticky let it a little more. When you take the mix out of the over, place on a grill to cool down. 
Step Two
 At this time make the mix for the cocoa sponge, separate the rest two eggs in separate bowls.  Beat the two egg whites until they peak. Mix the two egg yolks with 2 tablespoons of sugar, add rum essence and mix well until the color gets lighter. Add the egg whites and mix carefully, to not let all the air out. Add 1 tbsp of flour ,1 tbsp of cocoa powder and 1/2 tsp of baking powder and mix carefully. Put the mix in the loaf tin, put it in the oven for around 15 min and check again with a wooden stick if it's cooked. Take it out of the oven and place it on a grill to cool down. 
Step Three
 When the two sponges have cool down, cut them in the middle with a bread knife. Start with the vanilla pudding, mix the powder with the sugar add the vanilla pudding powder. Mix well and bring the mix to boil on high heat. During the entire boiling time, mix well to avoid the danger of burning at the bottom. When it starts to get thicker, put it aside to cool down.
Step Four
 Place on the loaf tin the first half cocoa sponge. Add a layer of apricot jam and then half of the vanilla pudding. Top up with half vanilla sponge and  add a layer of  rose jam and a layer of nutella. Add the cocoa sponge and add a layer of apricot jam. Finally, add the rest  of the vanilla pudding and finish by placing the last layer of the vanilla sponge. Let it in  cool place for 30 minutes to 1 hour. Then, carefully turn it on a serving plate. For a nice decoration,  sprinkle on top sugar and cocoa powder.

Tip 1: You can put in the sponge other tastes like lemon, rom, walnuts. If you choose to put a powder then decrease the amount of flour.
Tip 2: The most easy sponge cake, is made by using 1 egg, 1 tbsp sugar, 1 tbsp flour :). If you want to increase the quantity of the mix, increase proportionally all three ingredients.
