Chicken Curry With Peanuts

(my own recipe)

Serves 2
Ingredients:
  • 1 chicken breast
  • 100 gr peanuts
  • 1 can coconut milk 
  • 1 1/2 tsp ground ginger
  • 1/2 turmeric powder
  • 1/2 tsp cumin powder
  • 2 tsp paprika
  • 1 tsp mix masala 
  • 2 tsp brown sugar
  • 1 jalapeno
  • 1 onion
  • 1 garlic clove
  • 2 cardamom pods
  • 1 tsp mustard seeds 
  • fresh coriander
Step One
 Cut the chicken into bite-sized pieces and place them in a bowl. Blend the peanuts with the ginger, turmeric, cumin, paprika, mix masala and brown sugar and add the coconut milk in the bowl and mix well. Pour the final spice mix on the chicken pieces and mix them well.
Step Two
 Warm the oil in a wok and fry the cardamom pods and mustard seeds. Put the chopped onion, garlic and jalapeno and fry them for 1-2 min. Then add the paprika and stir well. Finally, add the chicken pieces with their spice mix, put the lid on the wok and let them simmer for 10-15 min. Garnish with fresh chopped coriander and serve with rice.
