(my own recipe)
Ingredients:
- 50 gr butter
- 6 tbsp sugar
- 5 egg yolks
- 80 gr flour
- 1/2 tsp vanilla sugar
- lime zest (from 2 limes)
- 400 gr Ricotta cheese
- 4 tbsp semolina
- toffee sauce
Step One
Mix the butter, 1 tbsp sugar, 1 egg yolk, flour and vanilla sugar in a blender, until it looks like bread crumbs. Take the dough mix in your hands and mix it a little. Then cover it with a plastic foil and set aside in the fridge for 20 min.
Step Two
Mix the ricotta cheese, 4 egg yolks, lime zest, semolina and 5 tbsp sugar. You can add vanilla essence if you want.
Step Three
Preheat the oven to 200 Celsius degrees. Cut baking paper in small circles, enough to fit the base of the souffle cups and place one in each them. Take the dough out of the fridge and cut it into 6 pieces. Place them in the cups with your fingers and take a fork and make some holes (to the dough to not rise when it cooks). Put them to cook in the oven for 10 min.
Step Four
Take out the cups from the oven and sprinkle some semolina on the dough. Then, add the cheese mix on top and put them back in the oven for 20 more min. Take them out of the oven, and let them cool down before taking them out of the cups. Garnish with toffee sauce.
