Lemon Pancakes

(my own recipe)
Serves 2
Ingredients:
  • 200 ml milk
  • 175 gr flour
  • 1 tsp baking powder
  • 40 gr sugar
  • 1 large egg
  • zest from one lemon
  • juice from half lemon
Step One
Grate the zest from the lemon and also squeeze the juice from half of it. Measure the flour, baking powder, sugar and lemon zest into a mixing bowl. Make a well in the center and add the egg, lemon juice and half the milk. Beat well to make a smooth, thick batter and then add the rest milk to give the batter the consistency of thick cream.
Step Two
 Heat the frying pan over medium heat and grease with very few oil. Drop the mixture with a tablespoon into the hot pan. If you can multiple tablespoons if you want, you should just let enough space between them, so the mixture can spread.
Step Three
 When bubbles appear on the surface of the pancakes, turn them over with a wooden palette and cook on the other side for 30-40 seconds. Place the cooked pancakes on a wire rack and cover with a clean tea towel.
Step Four
 Serve them warm with melted chocolate and/or strawberries or bananas.


Enjoy!!!

Tip 1 : you can add the other half of the lemon juice, but you have to add 40 gr more sugar and serve them just with some whipped cream.
