Easy Cheesecake

 This is definitively not the best looking cheesecake I have made, but I was in the mood to experiment today and I had some mascarpone in the fridge so I said to make something sweet. What else do I have ...hm a box o frozen berries, I can definitively use that!!! so I did this and the result is delicious.

(my own recipe)

Serves 6
  • round tin, 24 cm
Ingredients:
  • 500 gr mascarpone cheese
  • 4 eggs
  • 1/2 tsp vanilla essence 
  • 6 tbsp sugar
  • 6 tbsp flour
  • lemon zest, from one lemon
Garnish:
  • frozen berries (of course you can use fresh and any type of fruit)
  • 4 tbsp sugar

Step One

 Preheat the oven at 180°C.
 In a big bowl, mix well the eggs with sugar, vanilla and lemon zest, Then, incorporate the cheese and the flour. Mix some more to be sure the cheese didn't make lumps and set aside.

Step Two

 Prepare the tin, either by using an oil spray either by placing baking paper on the bottom of the tin. Afterwards put the mixture in the tin and bang it to the table to spread evenly in the tin. Bake the mixture for 30 min in the preheated oven.

Step Three

  Take the cheesecake out of the oven and let it cool in the tin(it will be really tall like the tin, but when it will cool down it will be half the size). Afterwards, take the frozen berries and blend them with the sugar (the amount of sugar depends on the fruits), put the blended fruit in a pot and boil it for 20 min on medium heat . When the cheesecake it's slightly cold add the blended fruits and put it in the fridge preferably over night. Serve it cold.
