Yellow Bean Soup with Tarragon


This one is a delicious soup that I love. I'm not a huge fan of green beans, but I love yellow beans, because their flavour is more mild. Of course this is another recipe that is inspired from my mom.

Serves 6

Needs a 5lt pot
Ingredients:
  • 500 gr yellow beans
  • 500 ml tomato pure
  • 2 medium carrots 
  • 1 big potato
  • 1 big onion 
  • 1 celeriac (the size of a medium onion)
  • 1 small pepper
  • 3 tbsp oil
  • 2 tbsp dried tarragon
  • 3 slices of smoked bacon (optional)
this is the type of smoked bacon I usually use.
Step One
 Chop all the vegetables in cubes and set aside on a plate or each of them in a separate bowl. Cut the bacon in small cubes and set also aside.

Step Two
 Put the oil in the pot on medium heat. If you have chosen to use the pieces of bacon, fry them until they change colour (to a light brown). Afterwards, start adding the vegetables in the following order; first add the onion and fry until translucent; then add the rest chopped vegetables carrot, celeriac, pepper and let them fry for 4 mins (be careful to not let them burn on the bottom of the pot). If there is not enough liquid in the pot, you can add half cup water. Finally, let all the vegetables steam for 10 mins. 

 Step Three
  Add the potato, the yellow beans, the tomato pure and water and let the mixture boil for 30 mins. Then, add the tarragon, close the pot with its lid and let it simmer until the yellow beans and the potatoes are boiled. Serve warm.

ENJOY!!


Tip: if you will use fresh tomatoes before adding them to the soup, fry them in a pan until they change colour to a darker red.
