Roasted Peppers and Pickled Cucumber Stew


 (my own recipe)

 Serves 6-8
Ingredients:
  • 2 onions, chopped
  • 2 tbsp vegetable oil
  • 400 gr beef tongue; boiled, cleaned and cubed ( or any precooked leftover meat)
  • 500 gr tomato puree
  • 300 gr roasted peppers, chopped
  • 300 gr pickled cucumbers, sliced (I used the ones in vinegar)
  • 1 garlic clove
  • 2 tsp dried dill
  • 1 tsp dried oregano
  • salt and pepper to taste
Step One 

  In a deep pot add the oil and fry the onion for around 1-2 minutes, until translucent. Add the meat and cover the pot with a lid. Fry for 2-3 minutes.

Step Two 

 Add the peppers, the cucumbers, the dill and the oregano, re-cover with the lid and let it simmer for 5 minutes on medium heat.

Step Three

 Add the tomato puree, garlic, salt and pepper. Let it simmer on medium heat for 20 minutes. Serve warm with Mămăligă, potato mash or pasta.

tip: If the cucumbers are kept in brine, don't add extra salt.
