(Recipe from a magazine)
Serves 4
Ingredients:
- 1 tbsp olive oil
- 1 large onion
- 1 small leek, chopped
- 100 gr streaky rashers, chopped(optional)
- 1 tbsp flour
- 500 ml fish stock
- 250 gr new potatoes
- pinch of cayenne pepper (optional)
- salt and black pepper
- 300 ml cups milk
- 300 gr mixture of fresh fish (e.g. salmon,haddock and cod), cubed
- 4 tbsp cream
- 250 gr cooked prawns(shrimp)
- fresh parsley, chopped
- brown bread
Heat the oil in to a large saucepan over a medium heat, then add the onion, leek and bacon, if using. Cook for 8-10 minutes until the vegetables are soft and the bacon is cooked. Stir in the flour and cook for a further 2 minutes.
Step Two
Pour in the fish stock and bring to a simmer, stirring occasionally.
Step Three
Add the potatoes. Cover and simmer for about 12 minutes until tender.
Step Four
Add the cayenne pepper and some seasoning, then stir in the milk.
Step Five
Tip the fish into the pan and simmer gently for 5 minutes.
Step Six
Stir in the cream and prawns and simmer for a minute to heat through.
Step Seven
Sprinkle with chopped parsley and serve with brown bread.

Tips
- If you use fresh prawns, add them with the fish.
- If you want to add clams or mussels check the cooking period to not overcook them.
- I have used a knorr fish stock pot and 500 ml water, instead of fish stock.
