(my own recipe)
Ingredients:
- 200 gr lentils
- 2 tbsp oil
- 2 big onions
- 1 leek
- 2 big carrots
- 2 celery sticks
- 2 big potatoes
- 1 pepper
- 2l vegetable stock (or 2l water and 2 stock cubes)
- 2 bay leaves
- a bunch of parsley
- salt and black pepper
Chop all the vegetables in small cubes.
Step Two
Put the oil in a large pot (5l or more) on a medium heat and sauté the onion and leek for 2-3 minutes until softened. Add the chopped carrots, celery and pepper and cook for a further 3 minutes, stirring occasionally.
Step Three
Add the potatoes and lentils in the pot and stir for 2 minutes. Afterwards, add the stock, bay leaves, parsley. Add salt and black pepper to taste. Let it simmer on medium heat for 1h or until the potatoes are boiled. Remove the bay leaves and add some parsley to taste.
Serve warm with crusty bread and a dash of vinegar.
