Makes around 5 l
Ingredients:
- 1 kg potatoes
- 500 gr tomatoes
- 100 ml double cream
- 500 gr smoked pork neck(I used a pork hock)
- 400 gr vegetables(2 carrots, 1 parsnip, 1 slice celeriac -size of a medium carrot)
- 100 ml tomato paste
- 100 ml vinegar(or 1 l beetroot borscht )
- 1 big onion
- 1 egg
- 10 pepper corns
- 10 gr paprika
- tarragon and lovage (you can add parsley if you can't find them)
- 1 tbsp sugar
Cut the smoked pork in bite size cubes, chopp the onion, vegetables and tomatoes. Put all in a pot to boil with 3 l of cold water with the paprika, peppercorns and vinegar.
Step Two
Clean and cut the potatoes in bite size pieces.
After 30 min of boiling add the potatoes.
Step Three
Chopp the tarragon and lovage and set aside.
Beat the double cream, egg, sugar, tomato paste and add two ladles of the hot soup liquid.
Step Four
After 20 minutes more of boiling the soup, add the herbs and the cream mixture. Let it simmer for 5 more minutes then serve warm with green chilli peppers and more cream.
