Ingredients:
For the roast quails:
- 2 quails
- 10 gr butter
- 4-6 tbsp olive oil
- salt and pepper
- 2 potatoes
- 2 tbsp olive oil
- salt
- butter, salt and pepper to serve
Step One
Preheat the oven at 200 ℃
Step Two
Wash the potatoes and dry them. Pierce their skin with a fork and rub them all over with oil and salt. Put them in an ovenproof dish for 1h(depending on the size of the potatoes). Remove from the oven, cut a cross in them and add a slice of butter in the cut. Add salt and pepper to serve.
Step Three
Meanwhile salt and pepper the quails. Make a small pocket on the breast under the skin and add the butter. Afterwards, make two small incision in the skin and put the legs through (example here with a chicken).
Step Four
Heat the olive oil in an oven proof pan and brown the quails on all sides. Afterwards put the pan in the oven for approximately 10-15 minutes (it really depends on the size of your quails). Remove from the pan and let them rest for 5-10 minutes before serving.
Serve with a light green salad.
