(my own recipe)
Serves 4Ingredients:
- 2 cups orzo pasta
- 4 tbsp greek extra virgin olive oil
- 1 big onion, chopped
- 2 garlic cloves, finely chopped
- 1 red pepper, chopped small cubes
- 1 courgette (around 400 gr), chopped in small cubes
- 1 medium carrot, grated
- 2 tbsp Greek yogurt
- 2 tbsp parsley, chopped
- salt and pepper
Step One
Bring a large pan of salted water to the boil and cook the orzo according to the packaging instructions, then drain in a colander. Place the orzo in a big pot, add one tbsp of olive oil and mix well.
Step Two
In another pan, warm the olive oil and stir the onion and the garlic. Cook them for 2-3 minutes. Then add pepper, courgette, carrot and salt/pepper. Cook for an additional 5 minutes on medium heat, until the courgette and the pepper are tender.
Step Three
Toss the veggie sauce over the orzo. Add the yogurt and mix well. Sprinkle with parsley and give it another good toss. Have a taste and add additional seasoning, if required.
