(recipe from Easy Food magazine )
Serves 4
Ingredients:
- 1 red onion, sliced
- 8 chicken thighs
- 600 gr baby potatoes, halved
- 1 lemon, zest and juice
- 1 lime, zest and juice
- 2 tbsp olive oil
- 2 tbsp honey
- 4 garlic cloves, crushed
- ½ tbsp fresh thyme leaves
- salt and pepper
- 200 gr green beans, trimmed
Step One
Place the red onion in the bottom of the slow cooker in one layer. Add the baby potatoes and chicken thighs on top.
Step Two
In a small bowl , combine the lemon and lime zest and juice, olive oil, honey, garlic, thyme and some salt and black pepper.
Whisk to combine well, then pour over the ingredients in the slow cooker.
Step Three
Cover with the lid, then cook on high for 3-4 h or low for 6-8 h.
Step Four
Around 15 min before the cooking time it's over, set the slow cooker to high if it isn't already. Add the green beans an cook for the final 15 minutes.

I used:
- the oven for 1h on 180℃,
- 2 onions sliced on the bottom,
- didn't have green beans so added 2 big carrots,
- I personally prefer oregano over thyme so I used that.
