Citrus Drops

Makes about 20
Ingredients:

  • 175 gr / 6 oz /¾ cup unsalted butter, at room temperature, diced
  • 150 gr / 5 oz /¾ cup caster (superfine) sugar
  • finely grated rind of one large lemon
  • finely grated rind of one orange
  • 2 egg yolks
  • 50 gr /2 oz / ½ cup ground almond
  • 225 gr/ 8 oz/ 2 cups self raising flour
  • lemon or orange curd
  • milk, for brushing
  • flaked sliced almonds for sprinkling
Step One

 Preheat the oven to 160℃/ 325℉/ gas 3.
 Line two baking sheets with baking parchment. Beat the butter and sugar together until light and fluffy, then stir in the citrus rinds.

Step Two
 
 Stir in the egg yolks into the mixture, then add the ground almonds and flour and mix well.

Step Three

 Divide the mixture into 20 pieces and shape them in to balls. Place on the baking sheets. Using the handle of a wooden spoon, make a hole in the center of each cookie. Put 2.5 ml/½ tsp lemon or orange curd into each hole and pinch the opening to semi-enclose the curd.

Step Four

 Brush the tops of each cookie with milk and sprinkle with flaked almonds. Bake for about 20 min until pale golden brown. Leave to cool slightly on the baking sheets to firm up, then transfer to a wire rack to cool completely.
