(recipe from "Easy food" magazine)
Serves 2
Ingredients:
- 3 large Rooster potatoes, skin on, cut into thick wedges
- 2 tbsp olive oil
- 2 tsp Cajun spices
- 2 tsp smoked paprika
- salt and black pepper
- I added also 2 tsp dried oregano
Step One
Preheat the oven to 220℃/200℃ fan/gas mark 8.
Step Two
Fill a large sauce pan with water and season with salt. Bring the water to the boil and add the wedges. Parboil for 7-8 minutes until tender.
Step Three
Drain the wedges and pat very dry with kitchen paper.
- personally I don't think this step is needed along as you remove them from the water with a slotted spoon on a pot the water will evaporate.
Place the potatoes on a large, rimmed baking tray. Drizzle with olive oil and sprinkle the spices and some salt and pepper. Toss to coat, then bake 20-30 minutes or until golden and crisp.
