Spicy Wedges in the Oven

(recipe from "Easy food" magazine)

Serves 2

Ingredients:

  • 3 large Rooster potatoes, skin on, cut into thick wedges
  • 2 tbsp olive oil
  • 2 tsp Cajun spices
  • 2 tsp smoked paprika
  • salt and black pepper
  • I added also 2 tsp dried oregano
Step One

 Preheat the oven to 220℃/200℃ fan/gas mark 8.

Step Two

 Fill a large sauce pan with water and season with salt. Bring the water to the boil and add the wedges. Parboil for 7-8 minutes until tender.

Step Three

  Drain the wedges and pat very dry with kitchen paper.

  • personally I don't think this step is needed along as you remove them from the water with a slotted spoon on a pot the water will evaporate.
Step Four

 Place the potatoes on a large, rimmed baking tray. Drizzle with olive oil and sprinkle the spices and some salt and pepper. Toss to coat, then bake 20-30 minutes or until golden and crisp.
