(recipe from the Easy Food magazine)
Serves 4
Ingredients:
- 4 tsp olive oil
- 2 red and 2 yellow peppers, deseeded and sliced
- 2 courgettes, sliced
- 4 garlic cloves, crushed
- 4 tsp smoked paprika
- 2 x 400 gr tins of chopped tomatoes
- 4 tsp red wine vinegar
- salt and black pepper
- 500 gr hake fillets, skinless and boneless
To serve:
- fresh parsley, chopped
- crusty bread
Step One
Heat the oil in a large pan over a medium-high heat and cook the peppers for five minutes. Add the courgette and cook for five minutes until tender, stirring often.
Step Two
Add the garlic and paprika and cook for one minute longer. Add the tomatoes, the vinegar and some seasoning. Simmer for 5-8 minutes, uncovered, until thickened.
Step Three
Season both sides of the fish with salt, black pepper and a pinch of paprika, then nestle into the sauce.
Step Four
Cover loosely with a lid or tin foil and cook over a medium heat for another 6-8 min until the fish is opaque and flakes easily with a fork.
Step five
Sprinkle with some parsley and serve warm with crusty bread.
