(recipe from "Easy Food " magazine)
Ingredients:- Low-calorie cooking spray
- 250g stir-fry beef
- 1 red onion, diced
- 4 button mushrooms, sliced
- 2 garlic cloves, finely chopped
- 2 fresh red chillies, deseeded and diced
- Salt and black pepper
- 1 tsp chilli powder
- 1x 400g tin of chickpeas, drained and rinsed
- 400g passata
- 1 tsp fresh mint, chopped
- 1 tsp fresh coriander, chopped
- 6 brown tortilla wraps
- 280g light red Cheddar, grated
- Fresh coriander leaves
- 1 lime, cut into wedges
- Guacamole
- Rocket salad
Heat a saucepan and add some low- calorie cooking spray. Add your beef, onion, mushrooms, garlic, fresh red chillies and some salt and pepper and cook until the onion has softened and the beef has browned. Add your chilli powder and cook for one minute.
Step Two
Add your chickpeas and passata and simmer for 20 minutes, until the sauce has reduced and thickened. Transfer the mixture to a bowl and stir in your mint and coriander.
Step Three
Heat a large frying pan and add some low-calorie spray. Add one tortilla wwrap and spoon in one-third of the beef mixture. Scatter over one-third of the grated cheese and place another wrap on top. Leave crisp up for three minutes and flip over with a spatula or a fish slice. Cook for three minutes. Repeat with the remaining tortilla wraps, filling and cheese.
Step Four
Cut into quarters and garnish with fresh coriander leaves. Serve two quarters per person, with lime wedges and some guacamole and a rocket salad on the side.
