Pork tenderloin with grilled sweet potatoes



(my own recipe)

Serves 2

Ingredients:
  • 400-500 gr pork tenderloin
  • 2 medium sized sweet potatoes 
  • 1 cup white wine 
  • 1 tsp oregano 
  • 1 tsp thyme 
  • 1 tbsp dark soya sauce 
  • 2 tbsp honey 
  • 1 tsp salt 
  • 1 tsp pepper
Garnish:
  • sweet chili sauce
Step one 
 Place the pork tenderloin in plastic bag (it's easier to cover the meat with the marinate). Add the wine, oregano, thyme, salt and pepper. Let the marinade over the night or at least for an hour.
Step Two
 Mix the dark soya sauce with the honey and add just a little salt and pepper. Place the pork tenderloin on the grill and brush it on all the sides with the mix of soya and honey.
Step Three
 Cut the sweet potatoes  in half (without cleaning the skin), place them with the cut part downwards on the grill , don't forget to put some water in the pan. Let it on 250°C  for 30 min. Then take out the pork tenderloin and let it rest. Place back in the oven the sweet potatoes for 5-10 more min, if it's needed.
Step Four
 Clean the skin of the sweet potatoes,  cut the pork tenderloin place it on a warm plate. Garnish with some sweet chili.
