Cannelloni with Lasagna Twist

 A really fast and delicious meal, it's a little messy but deserves it :)
(my own recipe)

Serves 3-4
Ingredients:
  • 550 gr minced pork and beef mix
  • 2 onions around 200 gr
  • 2 garlic cloves
  • 1 kapia pepper
  • 4 tbsp olive oil
  • 400 gr canned tomatoes
  • 2 tbsp dried oregano
  • 1 tbsp dried dill
  • 10 lasagna sheets
  • 200 gr grated cheese (I used mozzarella)
  • 3 bay leaves
  • 200 ml stock (or plain water)
  • 2 tbsp tomato paste
  • salt and pepper
Step One:
 Preheat the oven to 200° C.
Step Two
 Put the olive oil in a pan. Chop the onion, kapia pepper, garlic and fry them in the pan. Add the minced meat and fry it until it looks cooked (usually it gets brown). Afterwards, add the canned tomatoes, oregano, dill, bay leaves, stock, tomato paste, salt and pepper. Let them simmer for 10 min.
Step Three
 Place the lasagna sheets in a bowl and add boiling water on them and let them for 5-10 min until they get soft to roll. Be aware that the lasagna sheets can stick together if they stay for too long.
Step Four
 Drizzle some olive oil (or butter) on the bottom of an oven-proof pot. Keep a portion of the meat mixture on the side and use the rest to make 10 lasagna rolls with meat inside them.  Put the rolls in the pot side by side. Spread the remaining meat on top of the rolls to protect them from getting dry. Place the pot in the oven for 30 min (at 200 C°). Finally, take it out, top on with grated cheese and let it in the oven for another 5-10 min.
