Crème Caramel with a Lime Twist

  I learn this recipe from my mom and I just added a little twist to it :)
("almost" my own recipe)


Serves 6-8
Ingredients:

Caramel:
  • 1/2 cup sugar
  • 3 tbsp water
Cream:
  • 5 eggs
  • 1 tbsp vanilla essence
  • 1/3 cup sugar
  • 2 cups milk
  • zest from one lime
  • juice from 1/2 lime


Step One
 Preheat the oven to 175°C.
Step Two
 Combine 1/2 cup sugar and 3 tbsp cold water in a saucepan over low heat. While the mixture cooks, continue stirring for 5 minutes or until the sugar has been dissolved. Increase heat to high. Boil, without stirring, for 5 to 7 minutes or until golden. Remove the pot from heat. Set aside for 2 minutes to allow bubbles to subside. Pour the sugar mixture into an ovenproof pot. Set aside and let it set.
Step Three
 Whisk the eggs well with the sugar. Afterwards add the milk, vanilla essence, lime zest and the lime juice.
Step Four
 Pour the milk mixture on top of the sugar mixture that is in the oven proof dish. Put it in the oven for 30 min at  175°C, then 30 min at 225°C or until golden. Let it cool down then turn it on a plate. Serve cold.
