(my own recipe)
- 500 gr pork meat
- 4 tbsp greek yogurt
- 4 tbsp sunflower oil
- 1 big onion
- juice from 1/2 lime
- 1 tbsp bright red paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp ginger powder
- 1/2 tsp turmeric powder
- 1/2 tsp garlic powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1 jalapeno
- 4 cardamom pods
- 1 tsp cumin seeds
- 1 concentrated vegetable stock (knorr)
- coriander leaves
Step One
Cut the meat in small cubes and put it in a bowl. Add on top yogurt and all the powders (cayenne pepper, ginger, turmeric, garlic, cumin, coriander, paprika). Mix well.
Step Two
Add the oil in a pan on medium heat. Add the cardamom pods and the cumin seeds. Let them for a little time, 1min, to fry. Afterwards, add the chopped onion and fry on low heat until light brown. Add the finely chopped jalapeno and stir. Put the meat with the marinade in the pan and fry for 5 min.
Step Three
Add 200 ml of water and the concentrated vegetable stock and let it simmer for 30 min or until the meat is tender. Add the lime juice and chopped coriander leaves and let them simmer for another 5 min. Serve while warm on a bed of rice. Garnish with fresh coriander leaves.
Tip 1: You can also use chicken breast but you should adjust the cooking times.
Tip 2: If you want more heat, use chili instead of jalapeno.
Tip 3: You can use normal vegetable stock instead of concentrated: Replace the concentrated vegetable stock and the water with 200 ml of normal vegetable stock .
Tip 4: If you use chicken meat you can also use chicken stock.
