(my own recipe)
- 500 gr turkey breast
- 150 gr sugar snap peas
- 100 gr aubergine
- 100 gr Thai asparagus
- 100 gr zucchini
- 1 red kapia pepper
- 5 spring onions (just the white part)
- 4 tbsp sesame seeds
- 4 tbsp sunflower oil
- 1 tsp sugar
- 2 tbsp rice vinegar
- 2 tbsp dark soya sauce
- 1 garlic clove
- 1 tbsp sesame oil
- 1 tsp salt
- 1/2 tsp fresh ground pepper
- a piece of ginger (5 cm)
Step one
Cut the turkey and all the vegetables into strips like this :
On the aubergine, put some lemon or lime juice and mix a little, so the strips will not get brown.
Step Two
Heat the wok and dry-fry the turkey, then take it out and place it on a plate to rest. Put the sunflower oil, sesame oil, grated ginger, chopped garlic and fry for 1 min. Start by adding the sugar snap peas, then the asparagus and stir-fry for 2-3 min. Then, add all the rest vegetables and stir-fry for 3 more min.
Step Three
Whisk the sugar, rice vinegar, soya sauce, salt and pepper in a bowl and add it to the wok. Put back the turkey meat back to the wok and stir-fry for 3-4 min. Serve hot with basmati rice or rice noddles.
Tip 1: If you like spicy food, you can replace the normal pepper with cayenne pepper or chili powder.
