Fast Spinach Stew

  This is a recipe that my mom used to trick us with, by putting meat and a fried egg near so we will eat spinach. By the way mom, i loved spinach then, and I still love it now:)

Serves 4
Ingredients:
  • 500 gr baby spinach
  • 2 medium onions
  • 250 gr bacon slices 
  • 2 garlic cloves
  • 1 can chopped tomatoes
  • 2 tbsp oil
  • salt and pepper
Garnish:
  • eggs 

Step One 
 Wash well the spinach. Cut the bacon in small pieces. Chop the onion and garlic to have them ready.
Step Two
 Heat the oil in a big pot. Add the bacon and fry until it's almost brown. Add the onion and fry until translucent. Afterwards, add the garlic and tomatoes, let them simmer for 2-3 min and then add the salt and pepper. Start by adding the spinach in the pot. Don't worry if the spinach looks too much in the pot, while it cooks it will loose more then 3/4 of it's volume. Let it simmer for 3 more min. Serve warm with a fried egg near or some rice.
