Marble Cake


(recipe from a cooking book)
Ingredients:
  • 4 eggs
  • 200 gr powder sugar
  • 200 gr flour
  • 200 gr butter or margarine 
  • lemon zest
  • 100 gr chocolate 
  • rum essence
  • vanilla essence 
  • salt
  • almond flakes
 Step One 
  Preheat the oven to 160 °C. Melt the butter and the chocolate and let them cool down for later.
Step Two
  Start by separating the egg yolks from the egg whites in two different bowls. Mix the egg yolks with the sugar, then start adding with a spoon  the flour and the melted butter. Then, beat the egg whites with a pinch of salt until they get soft picks. In a bigger bowl, mix the egg yolk mix and the egg whites slowly to not lose the volume.
Step Three 
  Split the mix in two halves (in two bowls). In one of them add the lemon zest and in the other add the melted chocolate. Put in the loaf tin some baking paper or just smudge the sides with butter and then add some flour so it will not stick to the tin. Alternate between the the two mixtures, by adding first the "white", then  the "brown" and so on until you finish both of them. Finally, sprinkle the almond flakes. Bake it on medium heat for 45 min DO NOT open the oven during the cooking time.
