Fried Cabbage with Smoked Sausages


 This is another traditional dish in Romania that I learned from my mother.
Some people add also onions, tomatoes and peppers. I like it plain :)
Most of the times I put smoked pork leg or bacon.

Serves 2-4
Ingredients:

  • one cabbage around 2 kg
  • 150 gr smoked sausage (or bacon)
  • 5 tbsp sunflower oil
  • 3 bay leaves
  • salt and pepper
Step One
  Slice the smoked sausage and fry it in sunflower oil in a big pot (4l pot with a lid would do it). Let the fire on medium.
Step Two
  Cut the cabbage in pieces and start putting it in the pot. Don't worry that initially it will not all fit in the pot, you can put it in 2-3 portions. Every time you add a cabbage portion in the pot, season it with salt and pepper. You need to put lid on as soon as you finish seasoning, as long as it's very important to keep the mixture moist. Every a while, mix well from the bottom up and place the lid on the pot. Be careful, it tends to stick and burn on the bottom. After you finish adding the cabbage, add the bay leaves and let it simmer for 15-20 min (always with the lid on).
Serve it warm, with polenta (if you wish) :)

Tip 1: If you want to add onion, tomatoes or peppers (or all of them), add them at the beginning, when the smoked meat is frying.
