Boeuf salad

This is another of my favorite dishes that I grow up with.
Traditionally,  in my family we make this salad just on Easter and Christmas-New Year, not sure why but that's how it's done, and we eat it as an appetizer near other delicious stuff.
Imagine what... this recipe is actually not changed at all, that's how my grandmother used to do it and in her memory I keep that way.
(my family's recipe)

Serves 6-8 

Ingredients:
  • 1 chicken breast 
  • 6 medium potatoes
  • 3 big carrots
  • 1 medium onion 
  • 60 gr celeriac
  • 200 gr pickled cucumber
  • 1 can of green peas
  • 50-100 gr mustard (preferably a spicy one,  like Dijon or English, depends of your taste)
  • 400 gr mayonnaise 
  • salt and pepper
Step One

 Put in a big pot the vegetables and the chicken breast to boil  on medium heat for about 1h (be sure to check to not over do it). As long as the carrots cook the slowest, ensure that the carrots are boiled enough and all the rest will be also. Place them in a bowl and let them cool down for some minutes.


Step Two 

Cut all the boiled vegetables and chicken breast in to small cubes, around the size of the peas or a little bigger, but not too big because they will nor mix well. Add the pickled cucumbers cut in the same, small size and the green peas.



Afterwards add the mustard and 300 gr of the mayonnaise and mix well not to fast, to not mash the vegetables.


Step Three

 Put the mixture in another bowl and make the top as straight as you can, add the rest of the mayonnaise spread it on top. Afterwards have fun decorating it how ever you want or put the children do it :)
