Lettuce Soup

 Another recipe that I learned from my mom and grandmother.
(my own recipe)
Serves 6

Ingredients:

  • 1L vegetable stock (from the Boeuf salad)
  • 2 big lettuces   
  • 6 slices streaky bacon
  • 2 tbsp oil
  • 1 onion
  • 1 carrot
  • 1 celery 
  • 4 eggs
  • 250 gr Greek yogurt
  • 3 tbsp vinegar 
  • 20 gr fresh parsley
  • 10 gr fresh lovage
  • salt and pepper
Step One

 Cut the bacon in small pieces and fry in a 4l pot until golden brown. Then add the chopped onion and fry until translucent. Afterwards, add the vegetable stock, the grated carrot and the piece of celery. When the liquid is boiling, add the lettuce cut into strips (don't worry if it looks a lot, it will loose a lot of its body). Let it boil for 20 min.


 Step Two
While the soup is boiling, beat the eggs in a bowl. add a pinch of salt and pepper and fry (basically make an omelet). Cut it into strips or cubes.

Step Three
After the initial 20 minutes pass, chop the fresh herbs and add them in the pot, together with the omelet pieces and the yogurt. Stir everything in the pot, and let them simmer for 5-10 more min and serve warm-hot.
