(My own recipe)
Ingredients:
For the dough:
- 500 gr self-raising flour
- 250 gr sugar
- 3 eggs
- 100 gr butter
- 4 tbsp warm milk
- 1 bag dry yeast
- a pinch of salt
- 1 kg ricotta cheese
- 6 tbsp sugar
- 4 eggs
- 2 tbsp semolina
- 1/2 cup raisins
- 2 tbsp rum
Mix in a bowl the yeast with the warm milk ( don't add hot milk or the yeast will not grow). In a big bowl mix 500 gr flour, the sugar and the salt mix well the dry ingredients then add the butter and the eggs, mix it with your hand (beat it to the side of the bowl for 10-15 min) or with a mixer or bread maker. Afterwards add the mixture of milk and yeast and mix well. Cover the dough and let it aside in a warm place for 30 min to 1 h to rest.
Step Two
In a bowl add the cheese, sugar and eggs and mix well. Afterwards, add the semolina raisins and rum and mix some more :)

Step Three
Add a sheet of baking paper in an over proof pan you will use for the baking. Take the dough out of the bowl and mix it with the rest flour. Then use a rolling pin to stretch it on the shape of your oven proof pan and add it as it's bottom layer (you can also use your fingers but I don't recommend it because it will not be even). Then, add the cheese mix and bake on 175 C for 45 min. Let aside to rest and serve when it cools down.
