Blueberry Muffins



Makes 12 (or 24 mini😊)

Ingredients:
  • 375 gr (13 oz/3 cups) plain (all-purpose) flour
  • 1 tbsp baking powder
  • 165 gr (5 ¾ oz / ¾ cup) firmly packed soft brown sugar
  • 125 gr (4 ½ oz) unsalted butter, melted
  • 2 eggs, lightly beaten
  • 250 ml (9 fl oz / 1 cup )milk
  • 185 gr (6 ½ oz) fresh or thawed frozen blueberries 
Step One

 Preheat the oven to 210 ℃ (415℉/ Gas 6-7). Lightly grease two 6 hole muffin tins. Sift the flour and baking powder into a large mixing bowl. Stir in the sugar and make a well in the centre of the dry ingredients.

Step Two

 In a separate mixing bowl, add the melted butter, eggs and milk and stir  to combine. Add all at once to the flour mixture and fold until just combined.( Do not overmix as the batter should look quite lumpy.)

Step Three

 Fold in the blueberries. Spoon the batter into the prepared muffin tin. Bake for 20 minutes,
or until golden brown.Turn out onto a wire rack to cool.
