Kataifi


(recipe from a website -- not sure which one)
Ingredients:

  • 500 gr Kataifi pastry (you can find it in some Asian markets)

  • 500 gr thickly cut walnuts (I used a mix of pecan nuts and almonds)
  • 1/4 cup dried breadcrumbs
  • 1/4 cup sugar
  • 3 tsp cinnamon
  • 1 tsp ground cloves 
  • 1 tsp lemon zest
  • 500 gr melted butter
For the syrup:
  • 3 1/2 cup sugar
  • 1/2 cup glucose
  • 2 cups water
  • 2 sticks cinnamon
  • peel from a lemon (not the zest)
Step One


 Preheat the oven at 180°C.
 In a bowl mix the walnuts, dried bread crumbs, sugar, cinnamon, ground cloves and lemon zest. Melt 200 gr of the butter and add it in the mixture. Mix well and set aside.

Step Two

 Butter very well your oven proof pan. Unfold the kataifi and cut it in a length of about 14 cm. Take one strip in your hands, while moving gently the strands that are stuck together. Hold the edge of the strip in your hand, and put a spoon full of nut mixture on it. Loosely wrap it in a roll shape and place it in the pan. Continue until your materials are finished. Try to place your kataifi rolls as close to each other as possible, because they shrink while cooking.

Step Three

 Melt the rest of the butter and with a spoon cover all your kataifi rolls little by little. Be sure to butter them all. Bake at 180°C for 30-40 min until golden brown color.

Step Four

 In a sauce pan add the ingredients for the syrup, reach to boil and let it simmer for 5 min.

Step Five

 When the kataifi is cooked, put the syrup over the kataifi rolls with a spoon little by little. It is very important this process to be done while the syrup and kataifi are both hot. Let aside to set, so the syrup will get absorbed. Do not cover the pan so the pastry will remain crispy. Serve with vanilla ice cream.
