Makes about 36
Ingredients:
- 400 gr plain flour
- 1 tsp bicarbonate of soda
- pinch of salt
- 225 gr butter, at room temperature
- 175 gr caster sugar
- 175 gr soft brown sugar
- 1 tsp vanilla extract
- 2 eggs, beaten
- 350 gr good- quality dark chocolate chips
Step One
Line two baking trays with parchment paper.
Step Two
Combine the flour, bicarbonate of soda and salt in a small bowl.
Step Three
In the bowl of a standing mixer beat the butter, caster sugar, brown sugar and vanilla extract together on a slow speed for 30 seconds. Increase the speed and beat until pale and light.
Step Four
Beat in the eggs one at a time. On the slowest speed, stir in the flour mixture and the chocolate chips.
Step Five
Split the dough into three pieces. Form each piece of dough in to a log about 3 cm in diameter. Roll it up using cling film and seal the ends. Refrigerate until firm.
Step Six
Preheat the oven to 180℃/ 160℃ fan /gas mark 4.
Step Seven
Cut each log into 12 rounds. Place them on a baking tray, spaced well apart.
Step Eight
Place the cookies in the oven and bake for 12-15 min or until light golden brown. Remove from the oven and allow to cool for a few minutes on the baking trays before transferring to wire racks to cool completely
