(recipe from "Easy Food" magazine)
Serves 4
Ingredients:
- 20 baby back ribs
- 2 garlic cloves, peeled
- 3 cm pieces of fresh ginger, peeled and roughly chopped
- 1 red chili, deseeded and roughly chopped
- 1 tbsp balsamic vinegar
- 1 tsp salt
- 1 tbsp brown sugar
- 1 tsp ground cumin
- ½ tsp black pepper
- 1 tbsp paprika
- bunch of coriander, stems left on , plus extra for serving.
Step One
Put the pork ribs in a large bowl.
Step Two
Place all of the ingredients - except of few coriander leaves- in a small blender. Blend until the mixture has combined and a paste has formed.
Step Three
Using clean hands, rub the paste all over the ribs until completely coated. Cover and refrigerate for a few hours, or overnight if possible, to allow the flavors to develop.
Step Four
Preheat the oven to 160℃/ 140℃ fan/ gas mark 3.
Step Five
Place the ribs in a roasting dish and cover with foil. Cook for ½ hours until the ribs are cooked through.
Step Six
Remove the foil and increase the oven temperature to 180℃/160℃ fan/ gas mark4. Cook the ribs for another 35-40min.
Step Seven
Allow to cook slightly before serving with the reserved coriander leaves.

Tip: Personally I don't like spicy food so didn't add the chili, but added 1 tbsp of honey.
