Turkey meatballs with spaghetti and tomato sauce

Serves 4
Turkey meatballs:
  • 2 tbsp olive oil
  • 2 medium onions(approx.175 gr/6 oz), chopped
  • 40 gr (1 1/2 oz) white breadcrumbs(approx.2 slices)
  • 50 ml (2fl oz) milk
  • 250 gr (9 oz) turkey mince
  • 1 tsp fresh thyme
  • 1/2 tbsp flour, to dust hands
  • 2 tbsp sunflower oil, for frying
Tomato sauce:
  • 1/2 the chopped onions from above
  • 1 x 400 gr (14 oz) tin chopped tomatoes
  • 100 ml (3 1/2 fl oz) water
  • 1 tbsp tomato puree
  • 2 tsp sugar
  • 1/4 tsp oregano
  • pinch of dried chilli flakes
  • salt and freshly ground black pepper

Step One

 Heat the oil in a pan and fry the onions gently for about 10 minutes.
Step Two
 Meanwhile, soak the breadcrumbs in milk for 10 minutes in a large bowl.
Step Three
 To make the sauce, transfer half the sauteed onion to a pan, add all the other sauce ingredients and simmer for 10 minutes.
Step Four
 To make the meatballs, add the turkey mince, thyme, the remaining sauteed onion, salt and black pepper to the soaked breadcrumbs and mix together. Using floured hands, form teaspoons of the turkey mixture into small balls. Heat the sunflower oil in a frying pan and brown the meatballs. Transfer the meatballs to the pan of tomato sauce and simmer, uncovered, for 10 minutes.
Step Five
 Cook the spaghetti according to the instructions on the packet. Drain and toss with the sauce.
