Roast Pork with Shitaki sauce

Traditional danish meat with a tasty mushroom sauce
(my own recipe)
Serves 4
Ingredients:
Roast pork:
  • 1.5 kg of a piece of pork rack
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 (finely chopped) medium sized onions 
  • 1 tbsp brown sugar
  • 3 tbsp maple syrup
  • 1 tsp pepper
  • 1 tsp salt
Shitaki sauce:
  • 150 gr Shitaki mushrooms 
  • 3 garlic cloves
  • 1 tsp dried dill
  • 100 ml cream
  • 2 medium sized onions
Step One
 To marinate the pork, put it in a bag, fill the bag with water until the meat is fully covered and add all the rest ingredients for the roasted pork: (oregano, thyme, finely chopped onion, brown sugar, maple syrup, pepper and salt). Close carefully the bag and let it marinade in the fridge over night (around 10 hours or more).
Step Two
 Preheat the oven to 175 °C. Wash the meat to remove the dried herbs as much as you can. Put on a pan and in the oven for 2 hours with the skin side up.
Step Three
 Turn the pork meat, skin side down and turn on the grill mode of your oven. Cook the meat for for 15 min. Afterwards, turn the meat again and let it for another 15 min. Take the meat out of the oven and let it rest for 20 min. before cutting it into serving portions. Keep the meat juices that remained on the pan for the next step. 
Step Four
 Put the shitaki mushrooms in a bowl of cold water to hydrate. Let them in the water for 10 min. and when they get soft enough, cut them in pieces or slices. Finely chop the onions and the garlic cloves. Put a pan on high heat and add half of the meat juices and the chopped onions and garlic cloves. Pan-fry them for 1-2 min. or until the onion gets soft. Add the mushrooms on the pan and fry them for 3-4 min. Finally, add the cream  and stir-fry for another 1-2 min. Serve warm.
