Scrambled Eggs with Tomatoes and Feta


  One of my favorite "omelets" growing up (minus the feta cheese). 
(my own recipe)
Serves 2

Ingredients:
  • 6 eggs
  • 2 tomatoes
  • 50 gr feta cheese
  • 2 tbsp oil
  • salt and pepper
Step One
Chop the tomatoes in small cubes (like you cut an onion). If you don't like their skin, you can  clean it off. In a non-stick pan heat the oil and add the tomatoes. let them fry/simmer until they look melted or like a sauce, add salt and pepper and set aside.

Step Two 
In a large bowl beat the eggs well and afterwards put the pan back on the fire. When it's hot, add the eggs.  Mix from time to time to not burn the eggs on the bottom and when the eggs are almost done add the feta, cut into small cubes and let it for 2 min with the lid on . Serve hot, with fresh white bread.
