Plum Cake


 (recipe from an old cooking book with small tweaks  )

Ingredients:
  • 5 eggs
  • 300 gr caster sugar
  • 8 spoons vegetable oil
  • 350 gr flour
  • 1 tsp baking powder
  • 150 gr milk
  • 1 kg plums (more or less)
  • zest from one lemon
Step One

 Preheat the oven at 160 °C.
 Wash the plums and slice them, set the aside in a bowl.

Step Two

 Beat well the eggs with the sugar in a bowl. Add the oil slowly, one spoon at a time, while mixing in between. Mix the flour with the baking powder. Add the flour mix and the milk to the egg mixture, slowly alternating between these two. Place baking paper on the oven tray and pour the mixture. Spread  it evenly with a knife.

Step Three

 Place the plums on top of the mixture and put it in the oven at 160 °C for 25-30 minutes. After it's done, sprinkle powder sugar on top in abundance.
