Chocolate Lemon Tart


(recipe from a cooking book)
Serves 8-10

Ingredients:
Crust:
  • 175 gr plain(all-purpose) flour
  • 2 tbsp unsweetened cocoa powder
  • 25 gr icing(confectioners)sugar
  • 1/2 tsp salt 
  • 115 gr butter or margarine
  • 1 tbsp water

Filling:
  • 250 gr caster (superfine) sugar
  • 6 eggs
  • grated rind of 2 lemons
  • 175 ml fresh lemon juice
  • 175 ml whipping cream
  • chocolate curls for decorating
Step One

 Liberally grease a 25 cm / 10 in tart tin(pan).

Step Two

 For the crust, sift the flour , cocoa powder , sugar and salt into a bowl.

Step Three

 Melt the butter and water over a low heat. Pour over the flour and stir the mixture with a wooden spoon until the dough is smooth and the flour has absorbed all the liquid.

Step Four

 Press the dough evenly over the base and side of the prepared tart tin. Refrigerate the tart shell while preparing the filling.

Step Five

 Preheat a baking sheet in a 190°C/375°F/Gas 5 oven.

Step Six

Whisk the sugar and eggs until the sugar is dissolved. Add the lemon rind and juice and mix well. Add the cream and mix. Taste the mixture and add more lemon juice or sugar if needed. It should taste tart but also sweet.

Step Seven

 Pour the filling into the tart shell and bake on the hot sheet until the filling is set, 20-25 minutes. Cool on a wire rack. When cool decorate with the chocolate curls.
