Hot Sesame Beef

I didn't have broccoli in the house so I added other vegetables.
I used Chinese chives, Chinese cabbage, carrots and onion.

(recipe from a book)
Serves 4

Ingredients:
  • 500 gr/ 1 lb 2 oz beef fillet,cut in to thin strips
  • 1 1/2 tbsp sesame seeds
  • 125 ml /4 fl oz beef stock
  • 2 tbsp soy sauce
  • 2 tbsp grated fresh ginger
  • 2 garlic cloves, finely chopped
  • 1 tsp cornflour
  • 1/2 tsp chili flakes
  • 3 tbsp sesame oil
  • 1 large broccoli, cut into florets
  • 1 yellow pepper, thinly sliced
  • 1 red chili, deseeded and finely sliced
  • 1 tbsp chili oil
  • 1 tbsp chopped fresh coriander, to garnish
Step One

Mix the beef strips with 1 tbsp of sesame seeds in a small bowl. In a separate bowl, whisk together the beef stock, soy sauce, ginger, garlic, cornflour and chili flakes.

Step Two

Heat 1 tbsp of the sesame oil in a large preheated wok or frying pan. Stir-fry the beef strips for 2-3 minutes. Remove and set aside.

Step Three

Discard any remaining oil in the pan, then wipe with kitchen paper to remove any stray sesame seeds. Heat the remaining oil, add the broccoli, pepper, chili and chili oil and stir-fry for 2-3 minutes. Stir in the beef stock mixture, cover and simmer for 2 minutes.

Step Four

Return the beef to the wok and simmer until the juices thicken, stirring occasionally. Cook for another 1-2 minutes.

Step Five

Sprinkle with the remaining sesame seeds. Garnish with fresh coriander.
