Musaca with sweet potato



(My own recipe)
Serves 6-8

 Tray used 20 cm x 26 cm 
 Ingredients:
  • 750 gr minced beef
  • 1 big sweet potato 
  • 1 onion
  • 1 egg (beaten)
  • 1 Kapia pepper
  • 1 garlic clove
  • 3 tbsp olive oil
  • 500 ml sieved tomatoes 
  • 200 gr grated cheese
  • 1/2 tsp  dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried dill
  • salt and pepper
Step One 

 Preheat the oven at 180°C.
 Peel the sweet potato and cut it in thin slices (by hand or with a mandolin).

  Clean and cut the onion and the pepper in small cubes. Put the oil in a big pan then  add the onions and fry until translucent. Afterwards, add the peppers, the minced beef and fry until the meet changes color. Next, add 400 ml of the sieved tomatoes, the dried herbs, garlic, salt and pepper and let it simmer for 5 min. Take the pan from the heat and let it cool down for 5-10 min. After the meat mix has cooled down slightly, add the beaten egg and mix well.





Step two

 In an oven prof tray, add a layer of sweet potato slices (each layer is approximately a third of the total slices) and top up with half of the meat mixture. Then, add another layer of the sweet potato slices and half of the grated cheese. On top of this, add the remaining meat mixture and a last layer of potatoes.




  For the last layer, put another layer of potatoes, topped by the remaining sieved tomatoes. Cover the food with a silver foil and put the tray in the oven for an hour at 180°C.  Afterwards, remove the silver foil, add the remaining cheese and put the food back in the oven for 10 more minutes. Serve warm or cold with pickles.
