Serves 4
Ingredients:
- 1 kg / 2 1/4 lb Chinese-style pork spare ribs
- 10 ml / 2 tsp Chinese five-spice powder
- 2 garlic cloves, crushed
- 15 ml / 1 tbsp grated fresh root ginger
- 2.5 ml /1/2 tsp chili sauce
- 60 ml / 4 tbsp dark soy sauce
- 45 ml / 3 tbsp muscovado (brown) sugar
- 15 ml / 1 tbsp sunflower oil
- 4 spring onions (scallions)
Step One
If the spare ribs are still attached to each other, cut between them to separate them (or you could ask your butcher to do this when you buy them). Place the spare ribs in a large bowl.
Step Two
Mix together all the remaining ingredients, except the spring onions, and pour over the ribs.
Toss well to coat evenly. Cover the bowl and leave to marinate in the refrigerator overnight.
Step Three
Prepare the barbecue. Position a lightly oiled grill rack over the hot coals. Cook the ribs over medium- high heat, turning frequently, for about 30-40 minutes. Brush occasionally with the remaining marinade up until the final 5 minutes.
Step Four
While the ribs are cooking, finely slice the spring onions. Scatter them over the ribs and serve immediately.
