Buttermilk Pancakes



(recipe inspired from a cookbook)
Serves 4

Ingredients:
  • 150 gr plain white flour
  • 1 1/2 tsp baking powder
  • pinch salt
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 250 ml buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • sunflower oil for greasing the pan
Step One

 Sift the flour, baking powder, salt, cinnamon into a bowl. Add the sugars, buttermilk, egg and butter and whisk to a smooth batter. Leave to stand for 5 minutes.

Step Two

 Lightly grease a frying pan and heat over a medium heat. Spoon table spoons of batter onto the pan and cook until bubbles appear on the surface. Turn over with a palette knife and cook the other side until golden brown. Repeat the process using the remaining batter, while keeping the cooked pancakes warm.

Step Three

 Serve immediately with whatever you enjoy, I ate mine with nutella and bananas.
