Cinnamon and Oat Pancakes with Honey and Banana

Makes 12

Ingredients
  • 300 gr plain flour
  • 200 gr porridge oats
  • 80 gr light brown sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 eggs
  • 480 ml milk
  • 80 ml sunflower oil
To serve
  • 1/2 banana per person, sliced
  • honey
Step One

 Place the flour and half the oats in the bowl of a food processor and add sugar, baking powder, salt and cinnamon. Blitz until the oats are coarsely ground.

Step Two

 Whisk the eggs, milk and oil in a large mixing bowl. Add the flour mixture and the remaining oats. Whisk until combined.

Step Three

 Heat a little sunflower oil in a nonstick frying pan over a medium heat. Drop 2-3 tbsp of batter into the pan and cook until bubbles appear on the surface of the pancake.
 Flip the pancake over and cook for a further 1-2 min, until golden. Repeat with the remaining batter.

Step Four

 Serve warm pancakes topped with sliced bananas and drizzled with honey.
