Veal Stew With Paprika and Yoghurt


(my own recipe inspired from greek cuisine)

Serves 6
Ingredients:
  • 1 kg veal
  • 3 tbsp olive oil
  • 1 large red onion
  • 3 tbsp sweet paprika
  • 2 red bell peppers
  • 1 small zucchini 
  • 3 medium sized tomatoes
  • 1 tbsp tomato paste
  • 100 ml red wine
  • 1 tbsp oregano
  • 3 carrots
  • 1"bouquet garni" of rosemary, thyme, basil, oregano and bay leaf
  • 1 tbsp corn flour
  • 200 gr yoghurt
  • salt and pepper
Step one
 Preheat the oven to 225°C.
Step Two
 Dice the meat in bite-size pieces. Warm the olive oil in a wide and shallow casserole and stir the onion for 6-7 min. over a medium heat until it becomes translucent but not colored. Sprinkle the meat with the paprika and toss it in the casserole for 10 min. to exude its juices.
Step Three
  Cut the peppers, carrots, zucchini in to thin strips or small quarters. Add the cut vegetables and  the finely chopped tomatoes to the casserole, season with salt and pepper. Afterwards add the tomatoes paste, oregano and red wine.Place the "bouquet garni" in the middle of the stew. Afterwards put the lid on the casserole and put it in the oven for 2 h or until the meat is tender.
Step Four
 Dilute the corn flour in 2 tbsp water. Place the diluted corn flour in a bowl, add the yoghurt and stir well. Pour some of the stew in the yoghurt mix, stir again and add the whole mix to the stew. Serve with rice.
