(my own recipe)
- 6 big tomatoes (around 1 kg)
- 1 big onion
- 5 medium sized carrots
- 2 celery sticks
- 5 medium sized kapia peppers
- 1 tbsp tomato paste
- 2 tbsp fresh parsley
- 1 tbsp dry oregano
- 1 garlic
- 1 tbsp paprika (or cayenne pepper, if you prefer heat)
- 1 big potato (optional)
- 150 gr rice
- salt and pepper
Blend the tomatoes and simmer with a tsp. salt and 1/2 tsp. pepper for 10 min. During this time, roast the peppers in the oven. When the peppers cool down, you should clean them by deseeding and peeling them.
Step Two
Grate the carrots, chop the onions and finely chop the celery. Put on a pan the onions and fry them until translucent. Add the carrots and the celery to the pan and saute them for 5 mins. Finally, add a cup of water and let them simmer for 10-15 mins.
Step Three
Add to the pan the tomatoes, the chopped peppers, the cubed potato (cut in very small cubes) and the paprika or cayenne pepper. Let them simmer for 20 mins. After add the rice and 2 cups of water. Let them simmer for another 30 mins. or until the potatoes are boiled. Finally, add the finely chopped garlic, the oregano and the parsley. Let them simmer for 5 min. Serve with fresh parsley.
