Brownie Waffles


(recipe from a cookbook)
Makes 6 pieces
  • 150 gr/ 5 1/2 oz plain white flour
  • 1 1/2 tsp baking powder
  • pinch salt
  • 1/2 tsp bicarbonate of soda
  • 25 gr /1 oz cocoa powder
  • 55 gr / 2 oz caster sugar
  • 1 tsp ground cinnamon
  • 250 ml / 9 fl oz milk
  • 1 large egg
  • 2 tsp vanilla extract
  • 85 gr /3 oz chocolate chips
  • 40 gr /1 1/2 oz pecan nuts, plus extra,to serve
  • sunflower oil, for greasing
  • whipped cream, to serve
 Step One

 Sift the flour, baking powder, salt, bicarbonate of soda, cocoa, sugar and cinnamon into a bowl. Add the milk, egg, butter, cream and vanilla extract and whisk to a smooth batter. Stir in the chocolate chips and chopped nuts and leave to stand for 5 minutes.  

 Step Two

 Lightly grease a waffle maker and heat until hot. Pour the batter into the waffle maker and cook until crisp and browned. Repeat, using the remaining batter, while keeping the cooked waffles warm.

Step Three

 Serve immediately, with the whipped cream and sprinkled with a few nuts.
(I used caramel ice cream and caramel topping )
