Apple, Apricot and Walnut Loaf


Makes: 1 loaf

Ingredients:

  • 225 gr / 8 oz / 2 cups wholemeal flour
  • 5 ml / 1 tsp baking powder
  • pinch salt
  • 115 gr /4 oz / 1/2 cup sunflower margarine (I used butter)
  • 175 gr / 6 oz / 1  cup soft light brown sugar
  • 2 large eggs, lightly beaten
  • grated rind and juice of 1 orange.
  • 50 gr /2 oz / 1/3 cup chopped walnuts (I used pecans)
  • 50 gr / 2 oz / 1/3 cup chopped  ready to eat dried  apricots
  • 1 large cooking apple
Step One

 Preheat the oven to 180 °C / 350 °F/ Gas 4.
 Line and grease a 900 gr/ 2 lb loaf tin (pan).

Step Two

 Sift the flour, baking powder and salt  into a large mixing bowl, the tip the bran remaining in the sieve (strainer) into the mixture.

Step Three

 Add the margarine, sugar, eggs, orange rind and juice. Stir, then beat with a hand- held electric beater until smooth. Stir in the walnuts and apricots.

Step Four

 Peel, quarter and core the apple, chop it roughly and add in to the mixture. Stir, then spoon into the prepared tin and level the top.

Step Five

 Bake for 1 h, or until a skewer inserted into the center comes out clean. Cool in the tin for 5 minutes, the turn the loaf out on to a wire rack and peel off the lining paper.
