Prune Muffins



I added vanilla icing...because I can :-) .
Makes 12

Ingredients:
  • 1 egg
  • 250 ml/ 8 fl oz/ 1 cup milk
  • 125 ml/ 4 fl oz/ 1/2 cup vegetable oil
  • 50 gr / 2 oz / 1/4 cup caster sugar
  • 25 gr / 1 oz / 2 tbsp soft dark brown sugar
  • 275 gr / 10 oz / 2 1/2 cups plain flour
  • 10 ml /2 tsp baking powder
  • 2.5 ml / 1/2 tsp salt
  • 1.25 ml / 1/4 tsp grated nutmeg
  • 115 gr / 4 oz/ 1/2 cup cooked pitted prunes, chopped 
Step One

 Preheat a oven at 200°C/ 400°F/ Gas 6.
Grease a 12-cup muffin tin (pan).

Step Two

 Break the egg into a mixing bowl and beat with a fork. Beat in the milk and oil.

Step Three

 Stir in the sugar. Set aside.

Step Four

 Sift the flour, baking powder, salt and nutmeg into a mixing bowl. Make a well in the center, pour the egg mixture and stir until moistened. Do not over mix ; the batter should be slightly lumpy.

Step Five

 Fold in the prunes.

Step Six

 Fill the prepared cups 2/3 full. Bake until golden brown, about 20 minutes. Let stand 10 minutes before turning out. Serve warm or at room temperature.
