Pork marinated in Jack Daniels sauce






Makes one cup sauce
Serves 4-6

Ingredients:

  • 1- 1,5 kg pork meat
  • 1 head garlic 
  • 1 tbsp olive oil
  • 2/3 cups water
  • 1 cup pineapple juice
  • 1/4 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 1/3 cup dark brown sugar
  • 3 tbsp lemon juice
  • 3 tbsp  mince white onion
  • 1 tbsp Jack Daniels Whiskey 
  • 1 tbsp crushed pineapple
  • 1/4 tbsp cayenne pepper 
 Step One

 Cut about 1 cm off the top of garlic. Cut the roots so the garlic will sit flat. Put the garlic in a small casserole dish or baking pan drizzle olive oil over it, and cover it with a lid or foil. Bake in a preheated oven 160°C (325°F) oven for 1 h. Remove garlic and let it cool until you can handle it.

Step Two

 Combine water, pineapple juice, teriyaki sauce, soy sauce and brown sugar in a medium sauce pan over medium/high heat.Stir occasionally until mixture boils then reduce heat until mixture is just simmering.

Step Three

 Squeeze the sides of the head of garlic until the pasty roasted garlic is squeezed out . Measure 2 tsp into the saucepan and whisk to combine. Add remaining ingredients to the pan and stir.

Step Four

 Let mixture simmer for 40-50 min or until sauce has reduced about half and it's thick and syrupy. Make sure it doesn't boil over. (or stick to the bottom) 

Step Five

Cut the pork in 1,5 cm slices put them in a big bowl and add the Jack Daniels sauce on top. Mix well to cover all the meat, cover the bowl with cling foil and put it in the fridge over night. Cook the meat on the barbecue or in the oven. Serve with mash potatoes.
