(recipe from"Everyday Greek" by Argiro Barbarigou)
Serves 4
Ingredients:
- 2 cups orzo pasta
- 4 tbsp greek extra virgin olive oil
- 250 gr white mushrooms, sliced
- 1 clove garlic
- 1/2 cup grated parmesan or kefalotiri cheese
- 2 tbsp greek yogurt
- 2 tbsp parsley, chopped
Bring a large pan of salted water to the boil and cook the orzo according to the packet instructions. then drain in a colander.
Step Two
In another pan warm the olive oil and stir the garlic. Add the mushrooms and wait until the cooking liquid is reduced.
Step Three
Toss the orzo in the mushrooms sauce. Add the yogurt, the Parmesan or kefalotiri cheese and mix well. Remove from heat, sprinkle with parsley and give it another good toss. Have a taste and correct seasoning.
