Apple Tart


(recipe from an old Romanian cooking book)

Tin needed 28 x 38 cm


Ingredients:

Dough:
  • 300 gr flour
  • 200 gr butter
  • 100 gr sugar
  • 1 egg
  • 1 tbsp Smântână  (or Greek yogurt)
Filling:
  • 2 kg apples
  • 4 tbsp brown sugar
  • 2 tbsp cinnamon
Step One


 Grate the apples and place them in a pot together with the cinnamon and the sugar. Place the pot on low heat and mix often to avoid the mixture sticking on the bottom. Bring the mixture into a boil, and let it for 20-30 min or until the apples become soft. Let aside to cool down.

Step Two
 Heat the oven at 180° C. Cut the butter into cubes in a large bowl, add the flour and mix it with your fingers. In the middle of the mixture add the egg, sugar and yogurt, mix well until you get a homogeneous dough. Split the dough in two and make two dough sheets. Wrap the sheets in cling foil and place in the fridge for at least 30 min.

Step Three 
 Grease the tin and place one of the dough sheets. Put it in the oven for 5-10 min, just until the dough starts to change color. Afterwards topup the dough with the apple mix, spreading it evenly. Place the second sheet of dough on the top of the tart. Cook the tart for 20-30 min until the top it's slightly brown. Spread icing sugar and cinnamon on the top while still hot. Let it cool down and cut in squares. Serve cold.
